Mayonnaise usually contains the oil(80%) , emulsifier(egg yolk in some cases), water and other ingredients. It is an oil in water emulsion which is highly unstable if not processed properly, resulting in oil separation. Homogeneous mixing is the key process of mayonnaise production.
